Welcome to 11th Hour Coffee
Our goal is to emphasize the relationship between company and community, providing a place to gather, share, and simply be. If we want to change our society, we must change our way of business. We take pride in sourcing our coffees ethically, respecting the process from start to finish. Above all, we value self-awareness, expression, and transparency. Remember, we can't escape our humanity, but we can embrace it.
What we do
We roast single-origin and carefully composed blends sourced directly from a network of producer partners across East Africa and Central America. Every coffee is roasted to order and shipped within 24 hours of roasting—at peak flavor. We don't apologize for the roast level or origin, and neither should you. If you like it darker, we roast it darker. If you want the fruit notes to sing, we preserve them.
Direct Trade Relationships
We know the people who grow your coffee. We work with producer partners across East Africa and Central America, visiting their farms, understanding their methods, and paying prices that reflect the care they invest.
We're transparent about origin, altitude, processing method, and tasting notes because coffee nerds deserve to know exactly what they're buying. Direct trade means a genuine relationship, not a transaction.

Community matters
Coffee is ritual. For the cafe regular, it's the quiet moment before the day begins. For subscribers, it's the arrival of a box, the smell of fresh beans, the deliberate choice to slow down. For all of us, it's a reason to gather.
We believe that changing how we do business means changing how we gather. So we built a cafe in Santa Cruz where you can taste what we roast, and a subscription model where we're part of your morning. Come as you are. We're here to listen as much as we're here to serve.
