Producer story
Alberto & Diego Guardia
Country
Costa Rica
Region
Central Valley
Hacienda Sonora has been in the hands of the Guardia family for over 100 years, and Alberto has been pioneering new and experimental processing at the farm since he took over in the 1970s. Located at the base of the Poas Volcano in the Central Valley of Costa Rica, the farm is surrounded and immersed in various exotic and lush vegetation, adding to the already nutrient dense volcanic soil that is so useful for coffee growing. Today, coffee plants take up over half of the farm’s 100 hectares, with the coffee processed and milled on site. They focus on natural and honey processed coffees to conserve water and other resources, and the energy used on the farm is derived from renewable energies, with the vast majority of the electricity used on the farm coming from a turbine called a Pelton Wheel in the nearby river.
Frequently Asked Questions
When will my order ship?
We process orders Monday-Friday. Your subscription will ship out within 24 hours of your order being processed.
How long does this coffee fresh?
We roast to order. Once your bag arrives, store it in a cool, dry place, sealed in its original bag or an airtight container. Coffee peaks in the first 2–3 weeks after roasting—that's when acidity is clearest and flavors are brightest. The roast date is printed on your bag, so you know exactly what you're working with.
Should I buy whole bean or pre-ground?
Whole bean stays fresher longer and gives you control over grind size for your brew method. If you don't have a grinder yet, we can grind your order to specification at checkout. Grind fresh, brew fresh—but if pre-ground fits your routine, that matters more than dogma.
What grind option should I choose?
It depends on your brew method. French press wants coarse. Espresso wants fine. Pour-over and drip sit in the middle. The bag notes the brew method we used—check there first. If you're experimenting with a new method, start with the grind size the method's instructions call for, then adjust based on taste (finer if it tastes weak, coarser if it tastes bitter).
What do tasting notes mean?
We taste every roast and list the actual sensations—acidity, body, flavor notes. If we write "stone fruit + dark chocolate," that's what should be in your cup if you brew it right. Tasting notes aren't poetic license; they're functional. They help you match the coffee to your mood and method. Don't overthink them. If a coffee says "bright citrus" and you want "balanced and full," pick a different one.
What if something's wrong with my order?
We stand behind our coffee. If something's wrong—stale, damaged, or not what you ordered—contact us within 30 days and include your order number. We'll reship or refund. Shipping happens fast; we take responsibility for what reaches you intact.
